STAY brings elegant French cuisine to Dubai. Its menu was designed by Yannick Alleno, a Frenchman who has helped set up many highly regarded restaurants around the world. These include the three Michelin star Le Meurice in Paris. The decor of STAY lives up to the food, with stylish black chandeliers setting off a classic contemporary interior.

STAY is one of three restaurants at the One and Only The Palm hotel in Dubai. It offers exceptional French cuisine to discerning diners.

The moment a diner walks into STAY, the surroundings leave no doubt that an evening of elegant fine dining awaits. The restaurant has high vaulted ceilings with black chandeliers, while white columns support the roof and timber lines the walls. These classic design features are accentuated with contemporary touches; a perfect reflection of the approach that has been taken to the menu.

The seating in STAY is arranged to create different areas, thereby allowing guests to talk in private with their friends and family. There is also a shared seating area that is suited to groups who want to get together and have free flowing conversations up and down the table while they enjoy the food that they have ordered.

The brains behind the menu come from Yannick Alleno, a French chef who is rapidly building a portfolio of restaurants around the world. Among the many top restaurants that Alleno has been involved in is Le Meurice in Paris. This has been awarded an exceptional three Michelin stars.

The STAY menu involves classic French cooking that has been given a fresh twist using contemporary techniques. Specialities include Black Angus tenderloin beef in a veal jus and slow cooked turbot in a shellfish jus.

For dessert, diners can select from STAY's Pastry Library. This allows guests to choose from a wide range of elegant pastries containing an array of delicious toppings and fillings. Guests can even design their own pastries.

Among the pastries available for sweet toothed diners is a 70% chocolate tart shuffle served with a cocoa sorbet that is bound to leave chocoholics stunned and awed. Guests who can't decide between the delicious pastries on offer can order a selection specially prepared by the chef. The sweet selection is ordered by the metre.

The restaurant is licensed and has a range of dessert wines and sherries starting with modestly priced sauvignon blanc and working up to the exclusive Icewine Riesling from Canada, each of which makes for a delightful finish to a meal.
